Eater posted this video which explains the best way to prepare the perfect steak. By attaching a Searzall (a searing tool) to a blowtorch, a thin piece of steak can be perfectly cooked because of the Maillard reaction. The video explains that this is a chemical reaction between “protein and sugar that creates brown, roasty flavors.”
