New York City’s famous Morimoto Chef, Erik Battes, brought science into his kitchen.

Inspired by a Ted Talk on quantum levitation, Chef Battes applied this technology to a special dish in his restaurant: Floating Uni.

The executive chef mastered this science, using magnets and liquid nitrogen, to create a one-of-a-kind unami-packed uni-butter filled cracker that actually floats in midair.

It is safe to say he is taking the meaning of culinary arts to a whole new level!
